We spent a decade in loud kitchens cooking other people's food. In 2019 we bought a beat-up delivery van, ripped out the shelving, dropped in a wood-fired plancha, and started serving the sandwiches we wished existed on a Tuesday night.
The menu stays small on purpose. Everything on the board is something we'd stand in line for ourselves, made from ingredients we'd cook for our own family. If it isn't excellent, it doesn't go out the window.
